I have fond memories growing up eating chicken pot pie.  My mom seemed to make it on those cold nasty days where you were chilled to the bone.  The pot pie would just lift my spirits.  Now I have found an awesome Leftover Chicken Pot Pie Soup Recipe.  This is definitely one to put in your keepers list!

      Leftover Chicken Recipes: Chicken Tetrazzini

      Are you a pasta fan?  Love chicken?  Boy, do I have a deal for you!  This Leftover Chicken Recipe is all about those two ingredients, Chicken Tetrazzini, mmmm.  Did you know this dish was named after a 19th century opera singer named Luisa Tetrazzini somewhere around 1908-1910? While it isn’t quite clear whether it is from San Francisco or New York City, one thing is for sure, it is delicious!

      Ingredients

      Instructions

      1. Preheat oven to 350°
      2. [Preparing]
      3. Coat a large stockpot with Pam Original No-Stick Cooking Spray
      4. Melt butter in the stockpot over medium-high heat
      5. Add onion, celery, pepper, salt, and mushrooms
      6. Saute 4 - 5 minutes. The mushrooms should be tender
      7. Add Taylor Dry Sherry and cook for 1 minute
      8. Gradually add the Gold Medal Flour - All Purpose to the pan and cook for 3 minutes. Make sure to constantly stir with a wisk
      9. Gradually add broth and continue to stir
      10. Bring to a boil
      11. Reduce heat and simmer 5 minutes, remember to keep stirring
      12. Remove from heat
      13. Add 1 3/4 cups 2 1/4 cups Kraft Grated Parmesan and cream cheese
      14. Continue to stir until the cheese melts
      15. Add the Ronco Vermicelli and chicken
      16. Stir until everything is blended
      17. [Cooking]
      18. Place the mixture into two baking dishes that are coated with Pam Original No-Stick Cooking Spray
      19. Use a food processor to make crumbs from the Wonder Bread
      20. Spread the breadcrumbs and 1/2 cup of Kraft Grated Parmesan evenly over the mixture
      21. Bake for approximately 30 minutes

      Leftover Chicken Recipes: Chicken Divan

      I had never heard of Chicken Divan before the other day when my friend told me about it.  Being the curious fellow that I am, I had to do some research.  Apparently, it got its beginning at a New York restaurant called Divan Parisienne Restaurant.  How bad could be something that hails from such a noble beginning?  It is delicious! I found a recipe and turned it around to be a Leftover Chicken Recipe so you can use what is left in the fridge.

      Leftover Chicken Recipes: Chicken Divan

      Prep Time: 20 minutes

      Cook Time: 15 minutes

      Yield: 4

      This is so easy to make and it is nearly impossible to mess up (just in case you are a lot like me). Personally, I love having more cheese, just don't add too much that it overpowers the soup flavors.

      Ingredients

      Instructions

      1. The oven needs to be preheated to about 400 degrees while you prepare the rest of the ingredients
      2. In an 8 in by 8 in baking dish, place the broccoli on the bottom
      3. Place the chicken on top of the broccoli as a second layer
      4. Mix the milk and soup
      5. Pour the mixture over the chicken and broccoli
      6. Liberally add cheese on top of the chicken and mixture (The more the merrier in my opinion)
      7. Bake until the sause is bubbling, this will take about 15 minutes

      Ingredients

      Instructions

      1. Preheat oven to 375 degrees
      2. Spray a 10-inch deep-dish pie pan with PAM-Original No Stick Cooking Spray
      3. Melt the butter over medium-high heat in a medium sauce pan
      4. Saute the onion until the onion is translucent but not quite to where it is browned
      5. Stir in the Gold Medal Flour and stir for 1 minute
      6. Whisk in the white wine and bring to a boil
      7. Add the chicken broth, salt, poultry seasoning and carrot and continue until the carrot is tender, this should take 4 - 6 minutes
      8. Stir in the rest of the ingredients and cook until a slight boil
      9. Pour the delicious smelling chicken mixture into the pie pan and add the biscuits on top
      10. Bake for approximately 18 minutes, the biscuits should be golden brown

      Leftover Chicken Recipes: Chicken Spaghetti Recipe

      Today on Leftover Chicken Recipes, we are giving hints if you have both chicken and pasta laying around.  You can use pretty much any type of pasta but I love spaghetti.  Try it out with other noodles and let me know how it goes.

      Leftover Chicken Recipes: Chicken Spaghetti Recipe

      Prep Time: 20 minutes

      Cook Time: 25 minutes

      Top with freshly Kraft 100% Real Parmesan Cheese for a perfect finishing touch

      Ingredients

      Instructions

        Pasta
      1. Fill a large pot with water and bring to a boil
      2. Add a tsp of Baja Precious - Extra Virgin Olive Oil to the water to keep the pasta from sticking
      3. Add pasta and cook for 10 minutes or until it is as done as you like it
      4. Toppings
      5. Add 2 tsps Baja Precious - Extra Virgin Olive Oil to 12-inch skillet on medium heat on the stove
      6. Add garlic and the chopped onion
      7. Saute until onion for about 4 minutes
      8. Add green bell and jalapeno peppers for another 4 minutes
      9. Add diced chicken until heated throughout
      10. Finishing
      11. Once the spaghetti is finished cooking, drain the water well and add to the skillet mixture
      12. Add the chopped tomato and reduce the heat to low
      13. Cook everything for another 4 minutes

      Leftover Chicken Recipes: Pumpkin Chicken Enchiladas

      Now here is a great seasonal dish to try.  This Leftover Chicken Recipe may sound a tad different, but don’t let it scare you.  The pumpkin is a great base and really adds to the flavors.  It doesn’t hurt that it is healthy too.

      Leftover Chicken Recipes: Pumpkin Chicken Enchiladas

      Prep Time: 15 minutes

      Cook Time: 25 minutes

      If you do use the jalapenos, you may want to remove the membranes and seeds if you don't like your food very spicy. If you want to light it up, leave them in. Yumm!

      Ingredients

      Instructions

      1. Preheat your oven to 425 degrees.
      2. Puree pumpkin, jalapeno, chicken stock, garlic, chile powder, cumin, salt, and pepper.
      3. Place approximately one cup of sauce into an 8 inch glass casserole dish.
      4. In a separate bowl, combine shredded chicken with green chiles, cilantro to taste, and season with salt and pepper.
      5. Spoon part of the chicken mixture on each tortilla and then lay the tortilla seam side down in the dish.
      6. Pour the remaining sauce over the enchiladas.
      7. Add cheese to the top of the enchiladas.
      8. Bake for 20-25 minutes until cheese is melted and casserole is bubbly.
      9. (remove seeds and membranes if you don’t need extra heat)

      Who doesn’t love the classic taste of cheesy chicken fajitas?  This is the Leftover Chicken Recipes version of that very thing.  This variety is very quick and just as tasty!  No matter what you do, you have to make these things cheesy.  Cheese just makes everything better, yumm.

      Prep Time: 10 minutes

      Add sour cream, shredded cheese, and Pace Picante Salsa to make an even more delicious meal.

      1. Mix all the marinade ingredients together.
